Radish, Carrot, Cucumber Salad with Sweet Vinaigrette
I've slightly adapted this light, crisp salad from In Sonnet's Kitchen. This is a great summer side salad to bring to a cookout or picnic.
Ingredients
- 1 bunch radished, sliced and quartered
- 1 cucumber, seeded and diced
- 2 carrots, shredded I do a large shred
- 3 tbsp chopped cilantro use a little extra for garnish, if desired
- 2 tsp white wine vinegar
- 2 tsp olive oil
- 2 tsp honey sub maple syrup for vegan?
- kosher salt and pepper to taste
Instructions

Mix the veggies and cilantro in a serving bowl.

Whisk the white wine vinegar, olive oil, honey and salt and pepper together in a small bowl or shake in a Mason jar.

Drizzle dressing over vegetables and toss to coat.
